Xiaopu Perdue J NV
Grape Varietals & Region: 100% Pinot Noir from Ningxia, China. The name comes from Génération Perdue, which is The Lost Generation. This is in relation to the confusion that Pinot Noir confuses Ian.
A little more maturity makes it look tacky, a little less tannin makes it less powerful. Using a higher proportion of stems makes it more angular, while not using new barrels makes it less expensive.
Taste Profile: Bright and clear, perfect for sipping when lightly chilled.
Winemaking Process: No acid or tannin is added to adjust the structure, natural fermentation, natural malolactic, and old barrel aging. For deployment across years, 21 is just a code name.
