A playfully-named Cap Classique — "tasty sparkling wine" in Afrikaans — that takes the traditional method as seriously as its name is unserious.
Grape Varietals & Region: 100% Chenin Blanc sourced from Villion Family Wines' vineyards around Bot River in the Cape South Coast, a cool-climate stretch of South Africa's Overberg where Atlantic and Indian Ocean influences keep the grape's natural acidity intact — exactly what a proper Cap Classique needs to hold its structure through years on the lees.
Taste Profile: Pale lemon with a green tinge and a fine, persistent mousse; green apple, pear and citrus up front with riper white peach and a floral lift, rounding into gentle brioche and bread-dough complexity from lees ageing. Dry, high-acid and creamy on the palate, finishing with a refreshing saline edge.
Winemaking Process: Made by méthode traditionnelle (South Africa's Cap Classique) — the base wine is fermented, then bottled with a secondary fermentation and matured on its lees before disgorgement, building the wine's fine mousse and biscuity depth the same way Champagne does.
Winemaker: Villion Family Wines traces back to Francois Villion, a French Huguenot who settled at the Cape in 1671; today it's run by winemaker Kobie Viljoen and his wife Elnette from their Bot River base, and the playful Afrikaans name sums up the winery's unpretentious, drink-it-and-enjoy-it approach even to a serious traditional-method fizz.
