Bodegas Saura Talebiano Monastrell 2022

Bodegas Saura was born in 2015 in the Bullas DO of Murcia, Spain. The vineyards of Bodegas Saura are located in small plots on terraces that flow through the Sierra de las Cabras. Located in the municipality of Caravaca de La Cruz, it is a major pilgrimage site & one of the five holy cities in the world and home to the unique cross that bears its name.

The vineyards are located within the Bullas Designation of Origin, a land whose relationship with wine is ancient, with finds dating back more than 2,600 years. Monastrell is the native variety and therefore the majority in this denomination.

Grape Varietals & Region: 100% Monastrell from Bullas in Murcia, Spain. Coming from the cooler Caravaca de la Cruz sub-region, the vineyards are planted on soils with a clay-silty structure and mostly limestone composition. Vineyards without irrigation so the roots reach the maximum depth in search of humidity

The name Talebiano comes from the laws of Nassim Nicholas Taleb, from the book THE BLACK SWAN.

In it, he explains that things do not exist until one day they do. That's why the labels feature fantastic animals such as a mixture of a horse and a deer, another that is half deer and half sheep, and another that is half rabbit and half fox.

Taste Profile: Intense with hints of stone fruit and a spicy background, cedar, undergrowth with spicy and balsamic notes. Easy entry into the mouth, unctuous and long-lasting.

Winemaking Process: The production is very traditional and destemmed grapes are mixed with whole bunches at 70/30%. The destemmed grapes come from the south-west of Caravaca, where we achieve the power of our Monastrell, and 30% come from the north-west, where we obtain the fruit and elegance.

Fermentation takes place in limestone tanks from a quarry near the winery. Maceration lasts for a short period of 6 days. After pressing, the wine is transferred to French oak foudres, where it completes the alcoholic fermentation and undergoes malolactic fermentation. Aged in French oak barrels for 10 months. After a slight clarification, it is bottled unfiltered.
