This encourages colour pigments to destabilize while not harming aromatic precursors which are still bound to unfermented sugars at this stage. The juice was then treated similarly to how they handle chardonnay, with a high solids barrel fermentation, weekly lees stirring, secondary malolactic fermentation encouraged, and a 15% new oak program.
