The resulting wine is a true reflection of the soil in which it’s grown.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTaste Profile: \u003c\/strong\u003eThe wine carries ripe fruit characters of dried herbs, spice, charcuterie and blood plum, with a ripe tannin profile. A five percent Viognier whole bunch component provides a perfume lift and savoury note to the palate\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWinemaking Process: \u003c\/strong\u003e\u003cmeta charset=\"utf-8\"\u003eThe fruit was picked by hand to minimise fruit damage and maximise quality. The fruit was then crushed, destemmed with around 15% remaining as whole bunches, and an additional 5% Viognier added as whole bunches to add vibrancy. Fermentation proceeded on skins for 10 days before basket pressing. Barrel maturation in seasoned 500 litre puncheons took place for 10 months.
